Gravel Quarry 2021

A vintage defined by precision

The journey begins in our rare, gravel-rich single-vineyard, where Cabernet Sauvignon vines are rooted on what we call the inimitable Simonsberg stones. The stones provide excellent drainage, helping the vines focus their energy on ripening and accumulation of depth and flavour. 

The 2021 vintage was influenced by cooler-than-usual weather, resulting in a longer ripening period for an elegant, fresh and structured wine. The climatic conditions imbued finesse, showing restraint in alcohol yet an abundance of layered complexity and concentration.

Once the grapes reached optimal ripeness, the bunches were carefully selected and hand-harvested, ensuring only the best fruit was selected.

Meticulous sorting took place at the cellar, after which small batch fermentation was employed.  The wine was then transferred to all-new, 36-month seasoned French oak barrels for malolactic conversion and ageing. The custom, super-premium oak regime is chosen for its subtle toast and spice notes, as well as the supreme integration of wood, fruit and silky tannins. Maturation lasts approximately 22 months. The wine is then bottled and aged further in our estate’s cellar, allowing the wine to harmonise completely.

The Gravel Quarry 2021 is rich and layered with dark blackberries, plums and hints of cassis as well as earthy tones, such as graphite, tomato leaf, and subtle spice. 2021 is structured yet elegant with fine-grained tannins and balanced acidity. Expect flavours of ripe black fruits and a mineral undertone that speaks to the gravelly terroir. It is long and lingering and has a harmonious blend of fruit and oak, with substantial age-worthy potential.
