“This Chardonnay is straight up, not oaked! Showcasing Chardonnay in its purest form. A lightly styled delightfully delicious mouthful centred on the notably lemon-citrus and peach fruit notes. The palate opens up to a wide spectrum of undertones of melon, wildflowers and a nuanced minerality on the aftertaste. Food Pairing

An ideal pairing with freshly caught line fish with a squeeze of lemon. Its fresh characters are a delightful complement to the fresh flavours of seafood and spring vegetables.

Analysis

Alc. 13.5%, R.S. 2.2g/l, T.A. 5.3g/l, pH 3.30

Vinification

De-stemmed berries were pressed and settled overnight after
which the juice was racked and pumped into stainless steel
tanks for the alcohol fermentation. Selected yeast strains were
used to elevate the fruit-profile of Chardonnay. After fermentation the wine was left on the lees under controlled
temperatures, with weekly stirring to maximise flavour and midpalate development.
